Ankura and Sahru (or as Ankura sometimes playfully calls him, Sahra) both hold a great amount of loyalty towards Rin for different reasons.  

Ankura attaches himself to the Aensland banner because of his storied history with the family name.  He would do anything to keep their name in prominence and power.  As a result, becoming a eunuch to him was nothing more than a stepping stone.  

Sahru, on the other hand is loyal to Rin because of what she did to save him from Morrigan’s control.  In addition, he does not have an issue serving under Rin if that means he is under her protection.  He noticed how Rin glared at him around the manor during his first stay, being envious of his larger girth and Sahru took steps to please her.

Since Ivy’s brothel is such a success at the moment, she is illusive and hard to recapture, angering Rin greatly.  And while Ivy is surrounded by guards and security, her workers, such as her highly successful male talent, Rokzi are not as shielded. Rin managed to capture Rokzi and treats him with an extra layer of frustration and disrespect, forcing him to clean the floors with his hat, clearly projecting her feelings towards Ivy on him.
